  • 1 can (15 oz) black beans, rinsed and drained
  • 1 small red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • 3 tbsp lime juice (freshly squeezed)
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • 1 cup oats

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Poke holes in sweet potatoes with a fork and roast for about 45 minutes until soft.
  3. Once cooled, scoop out the sweet potato flesh into a bowl and mix in black beans, red onion, cilantro, lime juice, garlic powder, cumin, and oats until combined.
  4. Form the mixture into about six patties using your hands.
  5. Place patties on the baking sheet and bake for 25-30 minutes until golden brown, flipping halfway through.
  6. Let cool slightly before serving on whole-grain buns or alongside salads.
