- 2 medium sweet potatoes (about 400g)
- 1 can (15 oz) black beans, rinsed and drained
- 1 small red onion, finely chopped
- ½ cup fresh cilantro, chopped
- 3 tbsp lime juice (freshly squeezed)
- 1 tsp garlic powder
- ½ tsp ground cumin
- 1 cup oats
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Poke holes in sweet potatoes with a fork and roast for about 45 minutes until soft.
- Once cooled, scoop out the sweet potato flesh into a bowl and mix in black beans, red onion, cilantro, lime juice, garlic powder, cumin, and oats until combined.
- Form the mixture into about six patties using your hands.
- Place patties on the baking sheet and bake for 25-30 minutes until golden brown, flipping halfway through.
- Let cool slightly before serving on whole-grain buns or alongside salads.
