Instructions
- Rinse shrimp under cold water, pat dry, and marinate with lime juice, olive oil, salt, and pepper for 15 minutes.
- Heat a non-stick skillet over medium-high heat. Cook shrimp in a single layer for 2-3 minutes on each side until pink and opaque.
- In a large bowl, combine cooked shrimp with diced avocado, sliced red onion, cilantro, and an additional splash of lime juice. Gently toss to mix.
- Serve immediately on plates or in bowls. Drizzle with olive oil if desired.
