Ingredients
- 3 medium zucchinis
- 2 boneless, skinless chicken breasts
- ¾ cup heavy cream
- 1 cup shredded Parmesan cheese
- 2 tbsp butter
- Fresh parsley for garnish
Instructions
- Spiralize zucchinis into noodles; set aside.
- In a large skillet over medium heat, melt butter and cook sliced chicken seasoned with salt and pepper until browned (about 5-7 minutes). Remove from skillet.
- In the same skillet, sauté minced garlic for 30 seconds, then add heavy cream and bring to a simmer. Gradually stir in Parmesan until melted.
- Toss zucchini noodles into the sauce for 2-3 minutes until tender, then return chicken to mix well.
- Serve hot, garnished with extra Parmesan and chopped parsley.
