Instructions

- Stir in sweet potatoes with smoked paprika, oregano, salt, and pepper. Cover and cook for about 10 minutes until tender.
- Add zucchini; cook uncovered for an additional 5 minutes until slightly soft but still crunchy.
- Remove from heat, garnish with fresh parsley, and serve warm.
