  • 12 ounces andouille sausage (sliced)
  • 1 medium onion (diced)
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1.5 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 3 cups chicken broth
  • 1 pound shrimp (peeled and deveined)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté sliced sausage until browned, about 5 minutes, then set aside.
  2. In the same pot, cook diced onion, bell peppers, celery, and minced garlic for 5-7 minutes until softened.
  3. Stir in Cajun seasoning and toast for 1-2 minutes.
  4. Add rice and chicken broth; season with salt and pepper.
  5. Return sausage to the pot, cover, and simmer on low for 25-30 minutes until rice is tender.
  6. In the last 5-7 minutes of cooking, add shrimp until they turn pink.
  7. Let sit for a few minutes before serving hot.
