- 1 tablespoon olive oil
- 12 ounces andouille sausage (sliced)
- 1 medium onion (diced)
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 2 celery stalks (diced)
- 3 cloves garlic (minced)
- 1.5 cups long-grain white rice
- 2 teaspoons Cajun seasoning
- 3 cups chicken broth
- 1 pound shrimp (peeled and deveined)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté sliced sausage until browned, about 5 minutes, then set aside.
- In the same pot, cook diced onion, bell peppers, celery, and minced garlic for 5-7 minutes until softened.
- Stir in Cajun seasoning and toast for 1-2 minutes.
- Add rice and chicken broth; season with salt and pepper.
- Return sausage to the pot, cover, and simmer on low for 25-30 minutes until rice is tender.
- In the last 5-7 minutes of cooking, add shrimp until they turn pink.
- Let sit for a few minutes before serving hot.
